If potatoes have cuts, bruises or begin to sprout, you can still use them.
Just remove the sprouts, cut away any bruises, cuts or green areas, cook and enjoy!

How to cook potatoes
Potatoes can be simple and delicious and we understand the desire to know how to prepare them, here are the basics!
Microwave
5-8 minutes Pierce 3-4 times with fork. Place potatoes on microwave-safe plate and microwave for 7 minutes, turning over halfway through.
Roast
40 minutes Cut potatoes into chunks and toss in olive oil, salt and pepper. Roast at 425˚ for 40 minutes or until fork tender, tossing halfway through.
Air Fry
18-20 minutes Cut potatoes into chunks and toss in olive oil, salt and pepper. Add to air fryer and cook at 400˚ for 18-20 minutes or until fork tender.
Boil
10-15 minutes Peel & cut potatoes into 2-inch chunks. Add to a large pot and cover with 1-inch of water. Sprinkle in a pinch of salt and bring to a boil. Boil for 10-15 minutes or until fork tender.
Grill
25-30 minutes Cut potatoes into chunks and toss in olive oil, salt and pepper. Wrap in foil and grill on medium heat for 25-30 minutes. To speed up the grilling process, parboil before grilling.
Pressure Cook
6-8 minutes Add potatoes and one cup water to pressure cooker. Cook on Manual high pressure for 6-8 minutes, then quick release. If desired, turn to saute mode to brown slightly.
Slow Cook
2-3 hours Cut potatoes into 2-inch chunks. Spray slow cooker with cooking spray and place potatoes inside. Drizzle with olive oil, salt and pepper. Cook on high for 2-3 hours, until fork tender.
Sauté
15-20 minutes Cut or slice potatoes. Heat oil in skillet. Add potatoes and saute over high heat, stirring frequently. To speed up the sautéing process, parboil the potatoes until tender before sautéing.
Steam
12-15 minutes Place vegetable steamer in pot, add water underneath and bring to a boil. Add potatoes and steam 12-15 minutes.
How to store potatoes
The optimum storage temperature is 45-55° F, and potatoes store best in the dark. With proper storage, potatoes should last for several weeks.

Uncooked peeled potatoes will start to discolor quickly due to exposure to air.
